In this interview, we talk to Claire about the need for creative solutions in food production, why okara was a natural choice for byproduct upcycling, and the future of sustainable food production.
Claire Schlemme is an ardent environmentalist who saw a need to fix a broken food system in order to protect the planet. Claire co-founded Boston’s first organic juice company to connect local farmers and city-dwellers through delicious foods. This experience exposed her to two challenges: food waste & the lack of affordable nutrition. Committed to finding solutions for these issues, Claire launched Renewal Mill to lead the way in creating a new circular food economy. Prior to diving into entrepreneurship, Claire was an environmental consultant in Cambridge, MA. She holds a BA from Wellesley College and a Masters of Environmental Management from Yale University.
