Amy Halloran likes flour so much she wrote a book about it, The New Bread Basket, and started the Flour Ambassador campaign to draw attention to the importance of small mills in changing our daily bread. She lives in Troy, New York where she runs a soup kitchen/community meals program and food pantry. In this episode, we talk to Amy about the history of wheat, the life cycle of a pancake, and why it’s so important to support regional grain production.
